Rhubarb & almond tartlets

Ingredients:
2 Sticks Red Rhubarb
16 fl ozStock Syrup
3 ozButter
3 ozSugar
3 ozGround almonds
10 fl ozWhipping cream, whipped
TO DECORATE
Raspberries, Strawberies
-grapes and mint sprigs
Procedures:
1Preheat oven to 180c/350f/gas mark Cut rhubarb into 1 inch lengths, poach in syrup for about 12 minutes, until slightly soft.
2Drain and cool.
3Meanwhile in a bowl, blend butter, sugar and almonds.
4Grease sixteen patty tins.
5Put 1 teaspoon of mixture into each tin.
6Bake for 10 minutes until golden.
7Cool in tins but remove before they set.
8To serve, fill each case with rhubarb, top with cream.
9Decorate with any remaining rhubarb, or fruit and mint sprigs.
