Lemony apple dumplings

Ingredients:
1 1/2 cupFlour
1 1/4 tspSalt, divided
1/3 cupShortening
4 tbspCold milk
1/2 cupBrown sugar
3 tbspButter or margarine, softene
1/2 tspCinnamon
4 medBaking apples, peeled, cored
1 Egg white, beaten
***lemon sauce***
1/2 cupSugar
4 tspCornstarch
1 cupWater
3 tbspButter or margarine
4 tspLemon juice
2 tspLemon peel, grated
1/8 tspSalt
Procedures:

2combine flour and 1 teaspoon salt.
3Cut in shortening until crumbly.
4Stir in milk until pastry froms a ball; set aside.
5Stir brown sugar, butter, cinnamon and remaining salt to form a paste.
6Divide and press into center of each apple; pat any extra filling on outside of apples.
7On a floured surface, roll pastry into a 14 inch square.
8Cut into 4 - 7 inch squares.
9Place one apple in center of each square.
10Brush edges of pastry with egg white.
11Fold up corners to center; pinch to seal.
12Place in a greased 9 inch square baking dish.
13Bake at 375°F for 35 ~ 40 minutes or until golden brown.
14Meanwhile, combine sugar and cornstarch in a saucepan.
15Stir in water.
16Bring to a boil; boil 2 minutes.
17Remove from heat; stir in remaining ingredients until smooth.
18Serve warm over warm dumplings.
