Ingredients:
2 cupChocolate chip or gingersnap
-cookie crumbs
3 tbspButter, melted
1 pack(3-?oz) instant vanilla
-pudding mix
1 cartn(8 oz) plain yogurt
1 pack(8 oz) cream cheese
-softened
1/4 cupOrange juice
4 tspGrated orange peel
1 can(20 oz) Dole pineapple
-slices (in unsweetened
-pineapple juice)
1 tspEach: sugar, cornstarch
Procedures:
1Recipe corner 8/92 sonya whitaker-quandt
2combine crumbs with butter.
3Press in 9-inch pie plate.
4Bake in 400 degree oven 5 minutes.
5Beat together pudding mix, yogurt, cream cheese, orange juice and 2 tsp orange peel (mixture is stiff).
6Turn into crust.
7Chill.
8Drain pineapple, reserve ?cup juice.
9Combine juice, sugar and cornstarch.
10Cook, stirring until boils and thickens.
11Cool.
12Stir in remaining orange peel.
13Arrange pineapple over top of pie.
14Spoon sauce over pineapple.
15Serves 6.
