Ingredients:
1/2 tspBaking soda
2 cupPersimmon pulp
2 1/2 cupSugar
2 Eggs
2 cupAll-pupose flour
2 tspBaking powder
1/2 tspCinnamon
1/4 tspVanilla
Pinch of salt
2 1/2 cupMilk
4 tbspMelted butter
Procedures:
1Stir baking soda into persimmon pulp.
2Add sugar and eggs; beat well.
3Add flour, baking powder, cinnamon, vanilla and salt; stir to combine.
4Stir in milk and melted butter.
5Pour into a well-oiled 9-by-13 inch baking pan and bake 55 minutes at 325 degrees.
6The pudding will poof up but will fall when it"s removed from the oven.
7Serve with either whipped cream or caramel sauce.
