Ingredients:
3/4 cupPersimmons, pureed
1 tbspUnflavored gelatin
1/3 cupHot water
1 tspLemon juice
2 Egg whites, stiffly beaten
Procedures:

2Place the softened gelatin in a large bowl.
3Add the hot water and stir until gelatin dissolves.
4Mix in the persimmon puree and lemon juice.
5Refrigerate the mixture until it is on the verge of setting, then fold in the egg whites.
6Pour the jelly into sherbet glasses and refrigerate it until firm and thoroughly chilled - about one more hour.
