Pear and ginger jam

Ingredients:
2 lbsPears
4 oz(?cup) preserved ginger
2 lbs(5 1/3 cups) sugar
1 1/4 cupWater
1 oz(1") fresh ginger
Juice of 2 lemons
Procedures:
1Makes 2 lbs peel, core and dice the pears.
2Cut the preserved ginger nto small chunks.
3Put all the ingredients into a preserving kettle and stir over a gentle hea t until the sugar has dissolved.
4Bring to a boil and boil rapidly for abou t 10 minutes, stirring occasionally, or until setting point is reached.
5Rem ove the piece of fresh ginger, lift out the fruit with a slotted spoon and place in hot clean jars.
6Rapidly boil the syrup to reduce for a few minute s, then pour over the fruit to cover.
7Cover and process, then complete sea ls and cool.
