Angus tenderloin with sauteed mushrooms

Ingredients:
2 lbsAngus beef tenderloin roast
Seasoned salt to taste
Pepper to taste
Sauteed mushrooms (follows)
Texas Caviar (follows)
SAUTEED MUSHROOMS
1 tbspButter
4 cupMushrooms, whole
1/2 cupOnion, chopped
1 tspGarlic salt
1/4 cupChicken broth
1/2 cupBeef broth
1 cupChablis wine
TEXAS CAVIAR
1 can(15-oz)black-eyed peas
1 medTomato, chopped
4 Green onions, chopped
1 tspGarlic, minced
1/2 Green bell pepper, finely
Chopped
1/4 cupCilantro, chopped
1/2 cupMild picante sauce
Salt to taste
Pepper to taste
Procedures:
1Rub outside of tenderloin with seasoned salt and pepper.
2Roast in a preheated 225°F oven 45 minutes.
3Slice beef at an angle into ˝inch slices.
4Serve each portion with 3 ounces sliced beef, ?cup each mushrooms and texas caviar.
5Sauteed mushrooms: heat butter in skillet until melted; add mushrooms and onions and cook until onions are tender.
6Add garlic salt, broths and wine.
7Simmer 15 minutes.
8Texas caviar: combine peas, tomato, green onions, garlic, bell pepper, cilantro, picante sauce, salt and pepper in bowl.
9Mix well, cover and chill 24 hours before serving
