16 largeShrimp
1 1/2 cupDry white wine
6 ozAqvavit or vodka
-Yogurt Sauce (recipe

Procedures:
1Rinse, clean and butterfly shrimp, leaving tails intact.
2Poach shrimp in white wine, tails up, 5 minutes, or until shrimp changes color.
3Do not overcook.
4Drain wine, then, away from flame on stove, flambe shrimp with aqvavit.
5Remove shrimp carefully and place in cold yogurt sauce.
6Makes 4 servings.
