Gamberoni's mussels in tomato sauce

Ingredients:
3 lbsMussels
9 Plum tomatoes, peeled
Seeded and chopped
Olive oil
2 tbspFinely chopped garlic
1 tspCrushed dried chili peppers
Salt and pepper
1/3 cupWhite wine
2 tbspChopped fresh parsley
1/3 cupHot water
Procedures:
1Scrub mussels and hold in cold water.
2Heat tomatoes in a little hot oil until softened, about 10 minutes.
3In large saucepan heat garlic, chili peppers, salt and pepper in 2 tablespoons oil until garlic is slightly browned, stirring frequently.
4Add mussels, white wine and parsley.
5Cook, stirring, 1 minute.
6Add tomatoes and hot water.
7Cover and cook until mussel shells open, about 5 to 10 minutes.
8Spoon mussels and liquid into soup plates.
9Discard any mussels that have not opened
