Ingredients:

| cup | Rice, long-grain | | 1
| lbs | Asparagus, fresh | | 2
| tbsp | Margarine | | 1 1/2
| lbs | Shrimp, peeled & deveined | | 2
| | Garlic cloves, finely chopped | | 1
| tbsp | Lemon juice | | 1/2
| tsp | Salt | | 1/4
| tsp | Pepper |

Procedures:
| 1 | Cook rice following package directions, salt optional. | | 2 | Reserve.?Clean and slice asparagus into 1 ? pieces. | | 3 | Heat 1 tablespoon of the margarine in large nonstick skillet. | | 4 | Add asparagus; stir-fry 3 minutes. | | 5 | Remove from skillet. | | 6 | Reserve.?Add remaining 1 tablespoon margarine to skillet. | | 7 | Add shrimp; stir-fry over high heat 2 minutes. | | 8 | Stir in garlic; stir-fry 1 minute more. | | 9 | Stir in lemon juice, salt and pepper.?Stir asparagus and rice into skillet. | | 10 | Heat to serving temperature. | | 11 | Garnish with lemon wedges, if you wish.?(joanie winters, ocean springs ms) |
