Noodles with smoked pork and rosemary

Ingredients:
1 lbsEgg Noodles, uncooked
2 tspVegetable oil
1 medOnion, chopped
1 lbsMushrooms, quartered
2 tbspFlour
1 cupWhite wine
3 tbspDijon mustard
1 cupLow-sodium chicken broth
8 ozSmoked pork
-OR lean cooked ham
-- cut into strips
2 tspChopped fresh rosemary, OR
1/2 tsp-Dried rosemary
Salt to taste
1/2 tspBlack pepper
Grated provolone (optional)
Procedures:
1Cook noodles according to package directions.
2While noodles are cooking, warm the vegetable oil in a large saucepan over medium heat.
3Add onion and saute until onion is transparent.
4Add mushrooms and stir.
5Let mushrooms cook for 6 to 8 minutes, stirring occasionally, until they are very tender.
6If there is liquid remaining in the pan after the mushrooms are cooked, increase heat to high until liquid has reduced completely.
7Reduce heat to low and stir in flour.
8Stir over low heat for 2 to 3 minutes.
9Stir in white wine, mustard and chicken broth.
10Over medium heat, bring sauce to a gentle boil.
11Stir in the smoked pork, rosemary, salt and pepper.
12Cover and simmer over very low heat.
13When noodles are done, drain.
14Immediately toss noodles with sauce.
15Top with grated provolone, if desired, and serve.
