Ingredients:

| | Loaf portuguese bread | | | -(or Italian bread) | | 1/4
| lbs | Chourico sausage (or more) | | | -(or use garlic sausage) | | | Liver and gizzard from turke | | 1
| large | Onion, chopped | | 2
| tbsp | Olive oil | | 2
| | Garlic cloves, chopped | | 1/4
| cup | Chopped parsley | | 1
| tsp | Black pepper | | 1/2
| tsp | Paprika | | 2
| | Eggs, beaten |

Procedures:
| 1 | Soak bread in water until soft. | | 2 | Squeeze dry and break up. | | 3 | Set aside. | | 4 | Simmer sausage, liver, and gizzard in water until tender. | | 5 | Drain and set aside. | | 6 | In a large frying pan saute onion in oil until soft. | | 7 | Add garlic and parsley. | | 8 | Stir in spices and meat. | | 9 | Add beaten eggs. | | 10 | Return all ingredients to frying pan and cook until mixture is slightly dry before stuffing the turkey. | | 11 | Stuff a 12 pound turkey. |
