Ingredients:
3 tbspBacon drippings
1 cupChopped onion
1/2 cupChopped bell pepper
1 cupFinely chopped parsley
1 cupDry white wine
1 tbspFinely chopped garlic
1 tbspSoy sauce
2 lbsAudouille - or other heavily
-smoked sausage
-Louisiana hot sauce or
-ground cayenne pepper to
-taste
1 tspSalt (or to taste)
6 medPotatoes, thinly sliced
Procedures:
1Heat the bacon drippings in a large, heavy saucepan over medium high heat, and saute the onions, bell pepper, and parsley, stirring occasionally until the onions are clear.
2Add the wine, garlic, soy sauce, and andouille, and mix well.
3Add the salt and hot sauce and stir.
4Add the potatoes, stir, cover, reduce the heat to low, and simmer, stirring occasionally until the potatoes are tender, about 30 minutes
