Baked stuffed flounder

Ingredients:
1/2 cupCelery, chopped
1 Clove minced garlic
1 Stick butter
1/2 lbsBoiled, chopped, shrimp
1/2 lbsCrabmeat
1 Egg, slightly beaten
1/2 cupChopped green onions
1 cupProgresso bread crumbs
2 tbspChopped parsley
Salt, pepper, red pepper
Procedures:
1Saute celery, onions and garlic in ?stick melted butter.
2Add bread crumbs, shrimp, crabmeat and parsley.
3Mix well.
4Season to taste with salt, pepper and cayenne.
5Split thick side of each flounder, lentthwise and crosswise, and loosen meat from bone of fish to form a pocket for stuffing.
6Brush well with additional melted buttter, salt and pepper.
7Stuff pocket with dressing.
8Melt remaining ?stick butter in shallow baking pan.
9Place fish in pan.
10Cover and bake at 375°F. for abt.
1130 minutes.
12Remove cover and bake additional 5 minutes.
