Ingredients:
2 1/2 tspCoarse (kosher) salt
1/2 tspWhole black peppercorns
2 tspCrushed red pepper
1 tbspPaprika
1/2 tspThyme
1 tspFennel seeds
1/2 tspFinely minced garlic
1 3/4 lbsPork, trimmed, lean, 1"dice>>>
Chilled
1/2 lbsFresh pork fat, ?dice>>>>
Chilled
Procedures:
1Combine dry spices in spice mill or mortar and grind to coarse texture.
2Mix with garlic in small bowl.
3Mix meat, fat & spices together in bowl.
4In stuff into casings using sausage stuffer or horn attached to grinder.
5Tie off into 5" links and hang in cool place to dry.
6Or, just refrigerate cook in your usual manner.
7Yield: abt.
