Ingredients:
4 5-8 oz. catfish fillets
CREOLE SAUCE
2 tbspButter
1 cupChopped onions
3/4 cupChopped celery
1/2 cupBell pepper, chopped
4 Cl Garlic, chopped
2 canTomato sauce, (8 oz. each)
2 Bay leaves, (whole)
1 tspChili powder
Salt, to taste
Cayenne pepper, to taste
1/2 tspSugar
1/4 tspThyme
1/4 tspDill
1/4 tspSweet basil
1 cupWater
Salt
Cayenne pepper
Procedures:
1Place catfish fillets in baking pan with 1-inch lip.
2Cover with creole sauce.
3Bake at 350°F. for 15-20 minutes.
4In a heavy pot, saute seasonings in butter until done (10 minutes).
5Add tomato sauce and water, bring to a rapid boil, and reduce to simmer.
6Stir occasionally and cook approximately one hour.
7Add water to retain volume.
8Season with salt and cayenne pepper to taste.
9Yields 4 servings.
