Ingredients:
2 lbsGround beef
1 cupOnion -- chopped
1 tbspGarlic -- minced
1/4 cupChili powder
1 tbspGround cumin
28 ozTomatoes, crushed w/puree --
(28 Ounce can)
With added puree
1 1/2 cupBeef stock -- or canned
Broth
2 cupCorn kernels -- fresh or
Frozen
15 1/2 ozKidney beans -- canned
Drained
1/4 cupChopped fresh cilantro
Procedures:
1Cook beef in heavy large pot or dutch oven over medium heat until brown, crumbling with fork, about 10 minutes.
2Add onion, garlic, chili powder and cumin and cook 5 minutes, stirring frequently.
3Mix in crushed tomatoes, beef stock, corn and kidney beans annd bring to boil.
4Reduce heat and simmer until thickened, stirring occasionally, about 30 minutes.
5(can be made 1 day ahead.
6Cover and chill.
7Bring to simmer before serving, stirring frequently).
8Mix in cilantro.
