Ingredients:
1 medOnion
3 tbspOlive oil
2 Garlic cloves
2 cupFresh tomatoes, chopped
1 tbspFresh thyme
1 tbspFresh parsley
1 1/2 cupFresh (not dry) Flageolets
-OR- other dry bean types
Procedures:
1Preheat oven to 350 °F.
2in a saucepan over medium heat, saute the onion and the garlic in the olive oil.
3Add the tomatoes and herbs.
4Stir in the beans and continue to cook for 10 minutes.
5Transfer to a casserole and bake for 30 minutes.
6(traditionally served with roast lamb).
