Ethiopian hot pepper seasoning

Ingredients:
2 tspCumin seeds
4 Whole cloves
6 Cardamom pods
1/2 tspWhole black pepper
1/4 tspWhole allspice
1 tspWhole fenugreek seeds
1/2 cupDried shallots
3 ozLong red dried chillies
3 To 6 small, dried hot
-chilli peppers
1/2 tspGround ginger
1/4 tspTumeric
2 tspSalt
Procedures:
1In a small frying pan, combine the cumin seeds, cloves, cardamon pods, black pep per, allspice and fenugreek.
2Cook over medium-low heat, stirring, until lightly toasted, about 1 minute.
3Place in a blender, add shallots and whirl until finely ground.
4Discard stems and seeds from chilies.
5Break up the pods and process until ground.
6Combin e with the toasted seasonings and the remaining spices.
7Makes 1 cup
