Quick bouillabaisse

Ingredients:
1/2 cupOnion, chopped
1/2 cupLeeks, thinly sliced
2 tbspOlive Oil
1/2 cupDry White Wine
1 tspSalt
1/4 tspPepper
1 Clove Garlic, crushed
19 ozCan Tomatoes
1/4 cupButter or Margarine
1 lbsPackage Frozen Flounder
Fillets, defrosted and
Coarsley cut
12 Clams, well washed
1 lbsPackage Frozen Cod Fillets
Defrosted and coarsley cut
1 Frozen Lobster Tail
Defrosted and sliced
1 tspFlour
2 tbspWater
2 tbspParsley, coarsley chopped
Procedures:
1Put onions, leeks and oil in a large, heavy saucepan.
2Cook slowly until onions are tender but not brown.
3Add wine, salt, pepper, garlic and tomatoes.
4Cook over low heat for 10 minutes.
5Heat butter in a skillet; add flounder, clams in shells, cod and lobster.
6Cover and cook slowly for 15 minutes.
7Blend flour and water.
8Stir into the tomato sauce.
9Add fish; heat.
10Serve in bowls sprinkled with parsley.
