Ingredients:

| tbsp | Olive oil | | 2
| tbsp | Butter or margarine | | 3
| tbsp | Flour, all-purpose | | 1 1/2
| cup | Milk | | 1/4
| tsp | Nutmeg | | 1
| tbsp | Worcesershire sauce | | | Salt to taste | | | Black pepper to taste | | 2
| | Egg yolks, beaten | | 1
| | Garlic clove, crushed | | 3
| tbsp | Dry sherry | | 1/2
| lbs | Shrimp, chopped cooked | | 1/2
| lbs | Crabmeat, chopped cooked | | 2
| | Pompano steaks(1.5lb ea) | | | Paprika |

Procedures:
| 1 | Saute onion in olive oil and butter in skillet until soft.?Reduce heat; gradually add flour, milk, nutmeg, worcestershire sauce, salt, pepper and egg yolks, stirring to blend.?Remove from heat; add garlic, sherry, shrimp and crabmeat.?Sprinkle pompano with salt, pepper and paprika.?Spoon sauce into two large pieces foil; top with pompano steaks and seal foil "envelopes."?Place in large baking dish and bake in preheated 375°F. | | 2 | Oven 20 minutes.?/td> |
