Ingredients:
1 Onion, small, chopped
2 tbspOlive oil
2 tbspButter or margarine
3 tbspFlour, all-purpose
1 1/2 cupMilk
1/4 tspNutmeg
1 tbspWorcesershire sauce
Salt to taste
Black pepper to taste
2 Egg yolks, beaten
1 Garlic clove, crushed
3 tbspDry sherry
1/2 lbsShrimp, chopped cooked
1/2 lbsCrabmeat, chopped cooked
2 Pompano steaks(1.5lb ea)
Paprika
Procedures:
1Saute onion in olive oil and butter in skillet until soft.?Reduce heat; gradually add flour, milk, nutmeg, worcestershire sauce, salt, pepper and egg yolks, stirring to blend.?Remove from heat; add garlic, sherry, shrimp and crabmeat.?Sprinkle pompano with salt, pepper and paprika.?Spoon sauce into two large pieces foil; top with pompano steaks and seal foil "envelopes."?Place in large baking dish and bake in preheated 375°F.
