Ingredients:
POACHING LIQUID
2 cupChicken broth, low sodium
1 cupTomato juice
1 medOnion, quartered
2 medCelery ribs, cut into 2"

1 medCarrot, cut into 2" pieces
1 bn Parsley
1/4 cupTomato paste, low sodium
1 largeCube of fish bouillon
5 clGarlic, peeled
1/4 tspGround saffron
COD
4 Codfish steaks, 4oz each
1 cupLeeks, thinly sliced
1 medGreen bell pepper, julienned
1 medTomato, cut into wedges
Procedures:
1In large dutch oven, bring 2 cups water and poaching liquid ingredients to a boil.
2Reduce heat to low and simmer 45 minutes.
3Strain liquid into large skillet and discard solids.
4Continue simmering liquid until reduced to 1 ?cups.
5Place cod, leeks, bell pepper and tomato in liquid; bring to a simmer.
6Cover and poach 5-6 minutes, or until cooked through.
7To serve, divide liquid and vegetables equally among 4 bowls.
8Cut cod into large pieces and divide equally among bowls.
