Ingredients:
1 tbspVegetable oil, preferably
-saflower or canola
2 Stems broccoli, washed
-seperated into small
-florets and peeled and
Sliced stems
1 1/2 cupSliced fresh mushrooms
1/2 cupChopped onion
2 tspChopped fresh oregano (or
-?tsp dried oregano)
1 tbspChopped fresh cilantro
1/3 cupLow fat milk
1 (8 ounce) pkg of reduced fat
-cream cheese, softened
1 Unbaked 14" oat bran pizza
-crust (another qbook
-export)
1 can(6 ?ounce) clams, drained
-and picked over
1 can(6 ?ounce) tiny shrimp
-drained
Procedures:
1Salt to taste freshly ground pepper preheat oven to 425 degrees.
2In a medium sized frying pan, heat oil.
3Saute broccoli, mushrooms and onion for 5 minutes.
4Add oregano and cilantro.
5Remove from heat; stir in milk and cream cheese.
6Allow cream cheese to soften.
7Mash until a smooth sauce forms.
8Arrange seafood on the 14" oat bran pizza shell.
9Spoon vegetable mixture over the top.
10Salt to taste.
11Bake for 20 minutes.
12Sprinkle with freshly ground pepper.
13When cooked, pizza topping will be lightly browned and the underside of the crust will be deep brown.
14Cut into 8 slices.
15Yield: one 14" pizza
