Party nibbles: grilled salmon ribbons

Ingredients:
1 lbsSkinless salmon fillet
- 1-inch thick
3 tbspLemon juice
1 tbspOlive oil
1 tspDried tarragon
2 tbspFresh parsley, minced
Salt
Pepper
Procedures:
1[2 tb chopped fresh dill may be used in lieu of tarragon]
2cut salmon into ?inch thick slices about 4 inches in length.
3soak wooden skewers for about 30 minutes in cold water.
4Thread salmon onto skewers.
5Place in single layer in shallow dish.
6combine lemon juice, oil and tarragon; drizzle over salmon, turning skewers once to coat both sides.
7Sprinkle with parsley.
8Let stand for 15 minutes.
9arrange skewers on lightly greased broiling pan or bakeing sheet.
10Sprinkle with salt and pepper to taste.
11Broil for 2-3 minutes or just until opaque.
