Ingredients:
1/2 lbsItalian Sausage
3 tbspOil, olive
3 Chicken drumsticks
3 Chicken thighs
1 Bell pepper, sliced
2 Garlic cloves, minced
1 28 oz. can Tomatoes
1 1/4 tspSalt
1/2 tspCinnamon
1/4 tspPepper
1/4 tspSaffron
2 tbspWater, hot
1 1/4 cupRice
1 1/2 ozPimentos
1 lbsShrimp, shelled
8 ozPeas, frozen
1 lbsScallops
Procedures:
1Heat sausages in ?cup water.
2Simmer, covered, five minutes.
3Uncover and cook 20 minutes.
4Shell shrimp.
5Cut sausages into ? pieces.
6Add oil to sausage grease.
7Cook chicken until lightly browned.
8Add pepper and garlic and cook two minutes.
9Add tomatoes, salt, cinnamon and pepper.
10Bring to boil.
11Reduce heat, cover and simmer 30 minutes.
12Mix saffron with water.
13Add to chicken mixture.
14Add rice and pimentos.
15Bring to boil, reduce heat, cover and cook 15 minutes.
16Add sausage, shrimp, scallops, and peas.
17Simmer covered until shrimp turn pink (five to ten minutes).
