Ingredients:

| lbs | Beef | | 2
| tbsp | Oil | | 1
| tsp | Musamun Curry Paste | | 1
| | Potato, cut into 1" cubes | | 1
| | Onion, quartered | | 1
| cup | Coconut Milk | | 2
| tbsp | Fish Sauce | | 1
| tsp | Brown Sugar | | 2
| | Red Chili Peppers, chopped | | 1/2
| cup | Roasted Peanuts | | | Hot Steamed Rice |

Procedures:
| 1 | Cut beef into 1" cubes. | | 2 | In a saucepan heat oil and curry paste on high heat, until paste bubbles. | | 3 | Add beef, potato, onion, coconut milk, fish sauce, brown sugar, red chili peppers. | | 4 | Stir well and cook for about 10 minutes. | | 5 | Reduce heat and simmer for 30 minutes. | | 6 | Serve immediately. | | 7 | Sprinkle with roasted peanuts. | | 8 | Accompany with hot steamed rice. | | 9 | Note: lamb can be substituted for beef. |
