Ingredients:
4 quartLeaf lettuce pieces
- (rinsed & crisped)
1/2 lbsTiny cooked shelled shrimp

2 cupBite-sized pieces of cooked
- Chicken or Beef Steak
1/2 cupThinly sliced red onion
1 smallCucumber, ends trimmed
- thinly sliced
3 smallOranges
1 medFirm-ripe avocado
1 cupGreen or red chili dressing
Procedures:
1Place lettuce in a large, shallow salad bowl.
2Arrange shrimp, onion, and cucumber on lettuce.
3With a short, sharp knife, cut peel and white membrane from oranges.
4Cut oranges crosswise into ? thick slices; arrange on salad.
5Peel and pit avocado, thinly slice lengthwise, and place slices on salad.
6Pour dressing over salad and gently mix.
7Makes 6 to 8 servings.
