Ingredients:
1 medButternut squash, peeled &
-- cubed
1 1/2 tspGinger, grated
1 tspOrange zest, grated
1 tspSalt
Pepper, to taste
Procedures:
1Put the squash in a medium saucepan and cover with cold water.
2Place over medium-high heat and bring to a boil.
3Reduce heat and simmer until tender, about 10 mins.
4drain well.
5Transfer the squash to a food processor.
6Add the ginger and orange zest and process until smooth.
7Add salt and pepper.
8Divide among 4 plates and serve.
