Shredded zucchini

Soft bread crumbs

Egg, slightly beaten

Dried Italian seasoning

Ketchup
Procedures:

Preparation time: 30 minutes .

Heat oven to 400 degrees.

In large bowl, combine all ingredients except ketchup, mixing lightly but thoroughly.

Place approximately 1/3 cup beef mixture into each of 12 medium muffin cups, pressing lightly; spread ketchup over tops.

Bake 20 minutes or until centers are no longer pink.

Remove meatloaves from pan; serve with mashed potatoes, if desired.
