Onion & bacon tart - flammekueche

Ingredients:
DOUGH
2 cupAll purpose flour
3/4 cup(or more) water
1 tspSalt
1 tspVegetable oil
TOPPING
12 Bacon slices, cut into ?/td>
-inch pieces (about 7 oz)
4 medOnions, thinly sliced
4 cupSmall curd cottage cheese
1/4 cupPlus 1 T creme fraiche or
-whipping cream
1 tbspVegetable oil
1/2 tspSalt
1/4 tspGround nutmeg
1/4 tspGround pepper
Procedures:
1For dough: mix flour, ?cup water, salt and oil in large bowl.
2Add more water by tablespoons if dough is very dry.
3Turn out dough onto lightly floured surface and knead until smooth and elastic, about 3 minutes.
4Wrap in plastic and refrigerate overnight.
5Bring to room temperature before continuing.
6for topping: prehat oven to 500°F.
7Saute bacon in heavy large skillet over medium-low heat until brown, about 10 minutes.
8Using slotted spoon, transfer bacon to paper towels; drain.
9Add onions to skillet with bacon fat and saute over medium heat until tender and light brown, about 10 minutes.
10Remove from heat.
11Puree cottage cheese in blender until almost smooth.
12Transfer to large bowl.
13Add creme fraiche, oil.
14Salt, nutmeg and pepper; stir to blend.
15divide dough into 4 equal pieces
