Ingredients:
1 tbspMargarine
1 Onion, chopped
1/2 tspCurry powder
1 tspSalt
Freshly ground pepper
1 canChicken broth
1 cupOrange juice
1 cupRice
1/2 cupRaisins
1/4 cupAlmonds, slivered
Parsley
Procedures:
1In a large skillet, melt margarine and cook onions (which have been seasoned with curry, salt and pepper) until soft.
2Add broth, juice, rice and raisins; bring to a boil.
3Reduce heat, cover and simmer 20 minutes, or until rice is tender and liquid is absorbed.
4Stir in almonds.
5Garnish with parsley.
