Ingredients:
OLIVE SALAD
2/3 cupGreen olives, pitted and
-coarsely chopped
2/3 cupBlack olives, pitted and
-coarsely chopped
1/4 cupPimiento, chopped
3 Cloves garlic, finely minced
1 Fillet anchovy, mashed
1 tbspCapers
1/3 cupFinely chopped parsley
1 tspOregano
1/4 tspBlack pepper
1/2 cupOlive oil
THE SANDWICH
1 largeLoaf Italian Bread
1/3 lbsHard salami, very thinly
-sliced
1/3 lbsHam, very thinly sliced
1/3 lbsProvolone, thinly sliced
Procedures:
1Olive salad: mix together all ingredients and let marinate for at least 12 hours.
2The sandwich: slice loaf in half horizontally and slightly scoop out insides.
3Layer on salami, ham and provolone.
4Spread on olive spread at least ?inch thick.
5Replace top half of loaf and eat
