Ingredients:
| 2
| quart | Water | | 1 1/4
| cup | Orzo pasta, uncooked | | | 1 ea Garlic clove, pressed | | 1
| cup | Mushrooms, chopped | | | 2 ea Scallions, chopped | | 1
| tbsp | Olive oil | | 1/4
| tsp | Black pepper |

Procedures:
| 1 | Bring water to a boil in a pan. | | 2 | Stir in the orzo & cook until al dente. | | 3 | This should take about 7 minutes. | | 4 | Drain & set aside. | | 5 | saute the garlic, mushrooms & scallions in the oil in a skillet until soft, about 3 minutes. | | 6 | Stir in the orzo, cook for a further 2 minutes. | | 7 | Sprinkle with pepper & serve. | | 8 | "vegetarian gourmet" winter, 1995 |
