Ingredients:
1/3 cupRed Wine Vinegar
3 tbspFresh Lemon Juice
1 tbspFresh Chives, minced
1 1/2 tspDry Mustard
1 1/2 tspSalt
1 tspGround Black Pepper
1/3 cupVirgin Olive Oil
1 1/2 cupMushrooms, thinly sliced
1 1/2 cupCherry Tomatoes, halved
1 1/2 cupZucchini, thinly sliced
1 1/2 cupCarrots, thinly sliced
1 1/2 cupGreen Onions, thinly sliced
1 1/2 cupGreen Bell Pepper, thinly
-sliced
1 1/2 cupBroccoli Florets
1 1/2 cupCauliflower Florets
1/2 cupSunflower Seeds, shelled
1/2 cupParmesan Cheese
Procedures:
1In a small bowl, combine red wine vinegar, lemon juice, chives, mustard, salt and black pepper; mix well.
2With a wire whisk, blend in olive oil.
3Combine vegetables, sunflower seeds and parmesan cheese in a salad bowl and marinate vegetables in refrigerator 8 hours or overnight.
