Ingredients:

| pack | Elbow macaroni (7 oz) | | 2
| tbsp | Butter | | 2
| tbsp | Flour | | 1/2
| tsp | Salt | | 1/2
| tsp | Dry mustard | | 1/4
| tsp | Pepper | | 2
| dash | Hot pepper sauce (to taste) | | 2
| cup | Milk | | 3
| cup | Shredded cheddar cheese | | | - divided (12 oz) |

Procedures:
| 1 | Cook macaroni in boiling salted water until "al dente". | | 2 | Approximately 5-6 minutes. | | 3 | meanwhile, in a small saucepan, melt butter. | | 4 | Stir in flour, salt, mustard, pepper and hot pepper sauce. | | 5 | Cook and stir until smooth. | | 6 | drain macaroni; combine with butter mixture in a large bowl and mix well. | | 7 | Stir in milk and 2 ?cups of cheese. | | 8 | pour into an ungreased 2 ?quart baking dish. | | 9 | Cover and bake at 350 °F for 30 minutes or until bubbly. | | 10 | sprinkle with remaining cheese; let stand 5 minutes before serving. |
