Macaroni & cheese - old-fashioned

Ingredients:
1 packElbow macaroni (7 oz)
2 tbspButter
2 tbspFlour
1/2 tspSalt
1/2 tspDry mustard
1/4 tspPepper
2 dashHot pepper sauce (to taste)
2 cupMilk
3 cupShredded cheddar cheese
- divided (12 oz)
Procedures:
1Cook macaroni in boiling salted water until "al dente".
2Approximately 5-6 minutes.
3meanwhile, in a small saucepan, melt butter.
4Stir in flour, salt, mustard, pepper and hot pepper sauce.
5Cook and stir until smooth.
6drain macaroni; combine with butter mixture in a large bowl and mix well.
7Stir in milk and 2 ?cups of cheese.
8pour into an ungreased 2 ?quart baking dish.
9Cover and bake at 350 °F for 30 minutes or until bubbly.
10sprinkle with remaining cheese; let stand 5 minutes before serving.
