Ingredients:
3 medRed onions, sliced thinly
3 medYams, thinly sliced
2 cupApple cider
2 tspBrown sugar
1/2 tspSalt
1/4 tspPepper
1 tbspFresh thyme
1 tbspOlive oil
Procedures:
1Preheat oven to 350°F.
2Arrange the onion and yam slices in alternating layers in a 9-inch round or oval gratin dish.
3Pour the apple cider into a small saucepan, add the brown sugar, salt and pepper, and stir over medium heat until the sugar dissolves.
4Pour the hot cider over the onions and yams and sprinkle with thyme.
5Dot with olive oil, cover the dish with foil, and bake for 1 hour.
6Remove the foil and continue baking, basting often, until the onions and yams are tender, about 30 mins.
7Divide among plates and serve.
