Apple, raisin, and rosemary dressing

Ingredients:
2 cupFresh bread crumbs
4 tbspButter
3 tbspWater
2/3 cupChopped celery
1/2 cupChopped onions
1 1/2 cupChopped, peeled apples
-(about 2)
1/4 cupGolden raisins
1/2 tspBaking powder
1 tspDried rosemary
2 tbspDry Madeira or
1 tbspBrandy
Salt and freshly ground
-pepper to taste
Procedures:
1Preheat the oven to 225°F spread the crumbs on a baking sheet and dry and toast them in the oven 5 to 10 minutes.
2Melt the butter in the water in a large skillet.
3Add the celery and onions, and saut?until the onions have absorbed the butter and are limp.
4Don"t brown them.
5Add the apples, raisins, bread crumbs, baking powder, rosemary, and the madeira or brandy.
6Season with salt/pepper to taste and toss well with a fork.
7If the stuffing seems overly dry, add an egg or a little chicken stock.
8Stuff a crown roast of pork or a turkey per your pork/turkey baking times/temps or place in a casserole dish and bake uncovered at 325°F until browned, about 25 minutes.
