Ingredients:
2 1/2 tspFenugreek
1 tsp(about 20 pods) cardamom
Seeds (cracked with a
Cleaver to release seeds)
3 tbspCoriander seeds
1 tbspCumin seeds
1 tbspMustard seeds
6 Cloves, whole
1 3 in cinnamon stick, thin
And broken into pieces
1/4 tspGround mace
1/4 tspNutmeg, grated
1 Big pinch cayenne
2 tbspTurmeric, ground
Hot pepper, toasted and
Dried (to taste)
Procedures:
1Preheat oven to 225 °F.
2in a small pan, combine fenugreek, cardamom, coriander, cumin and mustard seeds, cloves, and broken cinnamon stick.
3Bake for 15 minutes, shaking the pan a few times.
4Let cool.
5in bowl, combine the toasted spices with the mace, nutmeg, cayenne, tumeric and peppers.
6Place in a spice mill and grind to a powder.
7Store in an airtight container.
8Makes a ?cup of curry powder.
