Ingredients:
3 tbspOlive oil
4 medPotatoes, in
-very thin slices
Salt
3 Garlic cloves, minced
1 tbspParsley, minced
Procedures:
1Heat the oil in a 9 or 10 inch skillet.
2Add the potato slices in layers, sprinkling each with salt.
3Add the minced garlic.
4Toss the mixture to coat potatoes evenly.
5Lower the heat, cover tightly and cook 20 minutes or until tender, scooping and turning occasionally.
6(the potatoes will be separated, not in a cake).
7Turn up the heat so that some of the potatoes brown.
8Sprinkle in the parsley and serve immediately.
