| 1 | In a mixing bowl, combine flour, baking powder and salt. |
| 2 | In another bowl beat egg yolks slightly. |
| 3 | Add milk and oil and beat until mixed. |
| 4 | Add yolk mixture to flour mixture all at once. |
| 5 | Stir just until combined. |
| 6 | In a small bowl, beat egg whites until stiff peaks form. |
| 7 | Gently fold into flour mixture. |
| 8 | Do not over mix! pour ?cup mixture into preheated waffle maker and cook according to manufacturers instructions. |
| 9 | When done lift waffle out of maker with a fork. |
| 10 | Makes 5 or 6 waffles. |
| 11 | Easy waffles: prepare as above but do not separate eggs. |
| 12 | In a bowl beat whole eggs slightly. |
| 13 | Beat in milk and oil. |
| 14 | Add to flour mixture and stir slightly. |
| 15 | Chocolate waffles: prepare as above, but reduce flour to 1 ?cups and add 1/3 cup cocoa and 1/3 cup sugar to the flour mix. |
| 16 | Add 1 ts vanilla to the egg mix. |
| 17 | Cinnamon waffles: prepare as above but add ?ts cinnamon to the flour mixture. |
| 18 | Buttermilk waffles: prepare as above but subsitute 2 cups buttermilk for regular milk. |
| 19 | Note: bake for 2 ?minutes in betty crocker waffle baker. |
| 20 | There will still be a little steam but the waffle will be done unless you prefer it to be very crisp. |
