Ingredients:
| 2
| cup | Cornmeal | | 1
| cup | Bing cherries, seeded | | 1/2
| lbs | Butter, softened | | 2
| cup | Brown sugar |
|
Procedures:
| 1 | To be authentic, use chokecherries in place of the bing cherries, maple sugar or syrup in place of the sugar and buffalo kidney fat (or beef suet?) in place of the butter. | | 2 | place the cornmeal on a cookie sheet and toast it in a 325 degree oven until it begins to brown. | | 3 | Careful -- this will not take long. | | 4 | drain the cherries well and chop coarsely. | | 5 | Mix all ingredients together well and chill in the refrigerator. | | 6 | To serve, simply dish out by the tablespoonful. | | 7 | It is eaten like candy. |
