Ingredients:

1 tbspCornstarch
1 cupChicken broth
3 tbspDry sherry
2 tbspSoy sauce
1/4 tspTo ?ts Tabasco sauce
1/4 cupPeanut oil
3 Chicken breasts, skinned
-boned, cut into 1-inch
-chunks
2 sliceFresh ginger
3 cupBroccoli flowerets
1 medRed bell pepper, cut into
-1-inch squares
1/2 lbsMushrooms, sliced
1 Bunch scallions, slivered
1 Clove garlic, minced
1/3 cupDry roasted cashews
Procedures:
1Assemble all of your ingredients ahead of time.
2Combine the cornstarch, chicken broth, sherry, soy sauce, and tabasco in a small bowl and have ready.
3ten minutes before serving, heat the oil in a hot skillet or wok.
4When oil is very hot, add chicken and ginger.
5Cook, stirring constantly, until chicken turns white.
6If using a skillet, remove chicken and discard ginger slices.
7If using a wok, just remove ginger slices and push chicken up sides.
8place the broccoli, red pepper, mushrooms, scallions, and minced garlic in the skillet or center of wok.
9Cook 3 minutes, stirring constantly.
10combine the chicken and the cornstarch mixture with the vegetables and continue stirring until the sauce thickens slightly.
11Sprinkle with the cashews and serve immediately with steaming hot rice.
