Ingredients:

| tbsp | Soy sauce | | 1/4
| tsp | To ?ts Tabasco sauce | | 1/4
| cup | Peanut oil | | 3
| | Chicken breasts, skinned | | | -boned, cut into 1-inch | | | -chunks | | 2
| slice | Fresh ginger | | 3
| cup | Broccoli flowerets | | 1
| med | Red bell pepper, cut into | | | -1-inch squares | | 1/2
| lbs | Mushrooms, sliced | | 1
| | Bunch scallions, slivered | | 1
| | Clove garlic, minced | | 1/3
| cup | Dry roasted cashews |

Procedures:
| 1 | Assemble all of your ingredients ahead of time. | | 2 | Combine the cornstarch, chicken broth, sherry, soy sauce, and tabasco in a small bowl and have ready. | | 3 | ten minutes before serving, heat the oil in a hot skillet or wok. | | 4 | When oil is very hot, add chicken and ginger. | | 5 | Cook, stirring constantly, until chicken turns white. | | 6 | If using a skillet, remove chicken and discard ginger slices. | | 7 | If using a wok, just remove ginger slices and push chicken up sides. | | 8 | place the broccoli, red pepper, mushrooms, scallions, and minced garlic in the skillet or center of wok. | | 9 | Cook 3 minutes, stirring constantly. | | 10 | combine the chicken and the cornstarch mixture with the vegetables and continue stirring until the sauce thickens slightly. | | 11 | Sprinkle with the cashews and serve immediately with steaming hot rice. | | 12 | Don"t forget the chopsticks! |
