Ingredients:
1 1/2 lbsChicken breasts, boned
1/3 cupPeanut oil
2 cupCelery, coarsely chopped
2 cupOnions, coarsely chopped
1 cupBamboo shoots, chopped
1 cupWater chestnuts, sliced
1/4 cupWater
1/4 lbsSugar peas
Soy sauce to taste
1 tspCornstarch
2 tbspWater
1/8 lbsFrench-fried blanched
-almonds
Plus extra almonds for
-topping
Procedures:
1Cut chicken in ?inch cubes.
2Brown quickly in hot oil in a large skillet.
3Add next 5 ingredients, cover, and cook about 7 minutes.
4Scatter sugar peas on top, cover, and cook 5 minutes.
5Add soy sauce.
6Mix cornstarch and water; add to skillet and cook, stirring, just until mixture is slightly thickened and glazed.
7Sprinkle with almonds and serve.
8Pass soy sauce and extra almonds.
9Serve with molded rice, and fresh orange slices.
