Ingredients:
CHOC. COOKIE CRUST
22 Chocolate wafers
1/4 cupButter or marg., COLD, cut
- into ?inch slices
1/8 tspGround cinnamon
FILLING
12 ozCream cheese, softened
1 cupSugar
2 Eggs
5 tbspCocoa
3/4 tspVanilla extract
1 tbspPowdered instant coffee
1 tspBoiling water
1 cupDairy sour cream
Procedures:
1Prepare chocolate cookie crust: crush wafers in food processor or blender to form fine crumbs.
2In med. bowl, mix crumbs, butter and cinnamon until evenly blended.
3Press mixture evenly on bottom of a 9-inch springform pan.
4Set aside.
5Heat oven to 325 deg.
6In large mixer bowl, beat cream cheese and butter until smooth and fluffy.
7Gradually beat in sugar.
8Add eggs, one at a time, beating well after each addition.
9Beat in cocoa and vanilla.
10Dissolve instant coffee in water; stir into cheese mixture.
11Add sour cream; blend well.
12Pour cheese mixture into pan.
13Bake 30 minutes.
14Turn off oven; leave cheesecake in oven 15 minutes without opening door.
15Remove from oven.
16Cool in pan on wire rack.
17Cover; chill.
18Garnish as desired.
19Makes 10 to 12 servings.
