5 cupZucchini, chopped
1 largePotato, peeled
-cut into 1" cubes
1 cupWater
3 Green onions
-thinly sliced
1 tbspMargarine, melted
-reduced calorie
1/2 cupWater
1 1/2 tspDried whole tarragon
1/2 tspBouillon gramules
-chicken-flavored
1/2 cupSkim milk
Procedures:
1Combine zucchini, potato, and 1 cup water in a small dutch oven.
2Cover and bring to a boil.
3Boil 10 mins or until crisp-tender (do not drain).
4Saute onions in margarine until tender; add to zucchini and potato.
5Add ?c water, tarragon, and bouillon granules stirring to blend.
6Add skim milk, and cook over medium heat until thoroughly heated.
