West indies pepper pot soup

Ingredients:
1/4 lbsSalt Pork
1 1/2 lbsShort Rib of Beef, 3" pieces
1 1/2 lbsStew Beef, cut into 2" cubes
12 cupWater
1/2 tspDried Thyme
1 1/2 tspSalt
1/4 tspPepper
Lg Onion, peeled & diced
2 xCloves Garlic, crushed
2 xScallions, with some tops *
2 tbspSalad oil
Lg Green Pepper, cleaned **
10 ozFresh Spinach, washed, trimm
10 ozFresh Kale, washed & trimmed
1 canOkra , drained (15 ?oz.)
4 xMed Sweet Potatoes, ***
Lg Tomato, peeled & cubed
Procedures:
1* cleaned and sliced ** and chopped *** peeled and cubed put salt pork and short rib pieces in a large kettle; brown ribs on all sides.
2Add stew beef and brown on all sides.
3Pour in water and slowly bring just to a boil.
4Skim.
5Add thyme, salt, and pepper.
6Lower heat and simmer, covered, 1 hour, occassionally removing any scum that rises to the top.
7While meat is simmering, saute onion, garlic, and scallions in heated oil in a skillet until tender.
8Add green pepper and saute 1 minute.
9Remove from heat and set aside.
10After meat has cooked 1 hour, add sauteed vegetables and other ingredients to the kettle.
11Continue to cook slowly, covered, about 30 minutes, until vegetables and meat are cooked.
12Remove from heat and cool slightly.
13Take out short ribs and cut off and discard any fat.
14Cube meat and return to kettle.
15Reheat, if necessary.
16Serves 8.
