Ingredients:

| oz | Dried (large) lima beans or | | | -butterbeans | | 1
| | Med. onion (chopped) | | 2
| | Ribs celery, including tops | | 1
| large | Carrot (diced) | | 4
| cup | Ham stock | | 1/4
| lbs | Diced ham | | 2
| cup | Water | | 1
| | Chili pepin (crushed) | | 2
| | Cloves garlic (minced) |

Procedures:
| 1 | We invented this yesterday, and are still munching on it. | | 2 | I wanted a plain plate of butterbeans for my birthday, but kathy can never do anything ?way. | | 3 | salt & black pepper to taste | | 4 | place all ingredients except salt and pepper in a pot. | | 5 | Bring to a boil, reduce heat. | | 6 | Cover pot and simmer until beans are very tender (3 to 4 hours). | | 7 | Salt & pepper to taste. | | 8 | Serve this with bread & butter, garlic bread, or dinner rolls. | | 9 | Makes a complete meal. | | 10 | Enjoy! |
