Ingredients:
1 1/2 lbsNew potatoes
1 eachBroccoli head, stem included
5 largeCarrots, sliced in small
-- rounds
1 smallCauliflower, coarsely choppe
1 medOnion, coarsely chopped
1/2 cupGhee
Procedures:
1If potatoes are very small, leave them whole: if not quarter them.
2Remove tough outer fibre of the broccoli stalk.
3Chop the whole thing.
4Steam over boiling water the potatoes, broccoli stem, carrots & cauliflower.
5After 10 minutes, add the broccoli florets & steam for a few more minutes.
6Vegetables should be just tender.
7Meanwhile, in a heavy skillet, saute the onions in half the ghee until they are transparent.
8Mix in the steamed vegetables except the broccoli florets.
9Cover & cook for 6 to 8 minutes, stirring frequently.
10Add broccoli & cook another 5 minutes.
11Heat remaining ghee & pass around at the table.
12Serve with injera
