Ingredients:
2 tbspOlive oil
1 medBell pepper, chopped
2 medOnions, chopped fine
2 Cl Garlic, crushed
1 lbsVenison, ground
1 lbsVenison, cut in chunks
8 ozTomatoes, canned
4 tbspTomato paste
1 Bay leaf
1 tspGround cumin
1 tspOregano
1/4 tspCayenne pepper
1 tbspChili powder, mild
Salt and pepper, to taste
1 cupBeef stock
2 tbspDark brown sugar, to taste
2 canChili peppers, small
14 ozRed kidney beans, canned
Procedures:
1Recipe by: uncle buck"s venison, littleton, nh heat olive oil in large saucepan.
2Add onions, garlic and bell peppers.
3Fr until soft.
4Brown all meat and add to above.
5Stir in tomatoes, tomato paste, seasonings and beef stock with a wooden spo bring to a boil.
6Reduce heat to low and cover.
7Add chili peppers.
8Simmer for two hours, stirring occasionally.
9Add kidney beans and simmer for another 30 minutes.
10Remove bay leaf and serve
