Ingredients:
2 Medium Onions, quartered
1 Medium Red pepper, sliced
1 Medium Green pepper, sliced
1 cupMushrooms
2 Medium Potatoes, quartered
1 tspSalt
2 tspBlack pepper
1 tspGarlic powder
1 tspCayenne pepper
1/4 tspWhite pepper
4 lbsBoneless pork loin roast
1/2 cupWater
Procedures:
1Combine vegetables and seasoning except black pepper in a mixing bowl.
2Mix well.
3Place roast in a large roasting pan, fat side up.
4Sprinkle with black pepper.
5Pour water over roast and add vegetables.
6Cook uncovered at 375 °F for 3 hours or until a meat thermometer 160 degrees.
7Increase heat to 425 degrees, cook 15 minutes or until meat is no longer pink.
8Serves
